Adam Khan Chapli Kabob
Few food stops in eastern Afghanistan have the reputation of Adam Khan Chapli Kabob. Located in Jalalabad, it represents the bold, generous food culture of Nangarhar.
A Jalalabad Food Institution
The experience is loud, warm, busy, and unmistakably local. Trays of chapli kabob move quickly from griddle to table, served with fresh naan, yogurt, vegetables, and the rhythm of a city that loves to eat well.
What Makes It Special
Chapli kabob is formed as a large flat patty rather than a skewer. Minced meat is mixed with tomatoes, onions, coriander, chilies, spices, and sometimes pomegranate seed before being cooked on hot iron until the outside crisps and the inside stays juicy.
Cultural Pairing: Fresh Sugar Cane Juice
The correct pairing is not tea. In Jalalabad, fresh sugar cane juice is the natural companion. Vendors press long stalks into a sweet green drink served cold, cutting through the richness of the kabob and matching Nangarhar’s warm climate.
